Producing Artisanal Uszka with Automated Food Machines

“Uszka” is a smaller type of Polish dumpling, literally meaning “little ears” in Polish reflecting on how they are shaped. Many Uszka producers want to manufacture Uszka that are free of artificial additives, and the final product resembles handmade dumplings with a perfect wrapper and filling ratio; the end product should have wrapper that is thin and al dente.
