Producing Authentic Scallion Pancakes in High-Volume
The prepared dough is placed into the hopper following the traditional method. After passing through 4 sets of flattening rollers, the dough is gradually flattened into 0.8mm transparent dough sheets. After ensuring the required resilience and texture of the dough sheets, they are evenly sprinkled with scallions and spices. After the initial rolling, 32 distinct layers of dough are formed. Next comes proofing for 10 minutes to solidify the oil, and then the dough is automatically divided into individual scallion pancake dough balls. The entire process requires only few operators and can achieve a high production capacity of up to 3,000 pieces per hour, reducing labor while significantly increasing production speed.
ANKO HLT-700U Multipurpose Filling and Forming Machine has a built-in Internet of Things (IoT) system which is connected to the Big Data Analytics. It collects data from each production and be utilized with extended applications to manage production balances, warehousing and scheduling.
