Innovative Multi Structure Noodle Products for Greater Profits
Recently, there has been an increasing demand for various types of innovative noodles, ramen and dry noodle products; consumers are also looking to purchase higher quality noodles and sauces. ANKO partnered with Taiwan’s Food Industry Research and Development Institute to analyze the physical structures of different types of noodles and the corresponding tastes and texture to explore new possibilities in product innovation.
So far, ANKO has created heart-shaped and fish-shaped molds, as well as dumbbell-shaped and triangle-shaped each features a different character. The triangle-shaped noodles are especially al dente and cook fast, while the fish-shaped noodles can absorb more sauce. ANKO can also custom design special molds to accommodate our customers’ requests.
ANKO NDL-100 Noodle Extruder is compact in size (1.3 square meter or 14 square foot), is significantly smaller than the traditional pressing-type noodle machines, and is suitable for small noodle producers, central kitchens, chain restaurants and food factories. ANKO’s extruding mechanism can accurately shape noodles or pastas better than traditional cutters and while avoiding any product deformity due to dull blades.
ANKO’s machine has a user-friendly interface that is easy to operate with simple parameter settings, and it can produce noodles in different lengths at desired speeds. It takes less than 5 min to change the molds, the entire machine is waterproof, making it effortless to create different types of noodle products.

ANKO’s "NDL-100 Noodle Extruder" can produce different shaped noodles with product textures each requiring different cooking time. ANKO’s machine has a special auger and a cold-water cooling system that can adjust the noodle production speed to ensure products will be perfectly formed. Simply load the hopper with premixed dough, install the desired mold and the machine will automatically and efficiently produce various types of high-quality noodles.

ANKO’s Noodle Extruder machine is co-created with Taiwan’s Food Industry Research and Development Institute. This innovative commercial noodle machine can be used to produce large quantities of noodles with unique shapes, such as heart-shaped, fish-shaped and dumbbell-shaped, as well as triangle-shaped noodles that increase the surface area to help absorb sauces after cooking. This machine is only 1.3 square meters (14 square foot) making it suitable for specialty noodle producers, central kitchens, chain restaurants, and food factories of any size. The automated noodle production starts after the dough is loaded in the hopper and then the machine’s automatic portioning function does the rest.
