Customized Kubba Mosul Production Solutions
Traditional Kubba Mosul is made with two pieces of flat pie shells, filled with a mixture of minced beef, almonds, and spices then rolled out to form a 9-inch circular meat pie. The production process is rather complicated, thus there are not many automated that can accomplish this production.
ANKO worked with a client from the Middle East and developed a Kubba Mosul Machine which is capable of processing minced meats that are highly viscous with special mechanisms, and non-stick molds. The pie shells are placed in between two non-stick films, pressed flat and perfectly round, and then the film is divided for packaging.
ANKO can also provide a complete Kubba Mosul Production Solution that has the capacity of producing up to 1,500 pieces per hour. The process begins with making the filling ingredients, then depositing the exact amount of dough on a conveyor film. Next, another film covers the dough, and the presser flattens the dough into pie shells. After these films are cut, the individually covered pie shells are stack and ready to be packaged.

With the non-stick filling depositor, a chunk of viscous meat is able to be laid down regularly to maintain stable product quality.
