Solve Production Issues with ANKO’s NDL-100 Commercial Pasta Machine

Mafaldine originated in the south of Italy; this pasta is usually made with semolina flour formed into ribbons that are 1-1.5 cm wide. This pasta is usually cooked to an “al dente” texture and served with a simple and delicate sauce. Whether it is served with a hearty meat sauce, cooked with seafood, or cooked in a classic tomato sauce, it is always a favorite.

ANKO NDL-100 Commercial Pasta Machine is compact in size and uses an extruding mechanism with a rotating blade that produces pasta at the efficient rate of 100kg per hour. It takes less than 5 minutes to change the forming molds to make different types of pasta. These changes do not require shutting down and cleaning the production line making it a more efficient process compared to the operation of traditional rolling/pressing type of noodle makers.

This ANKO machine can process dough made with flour and up to 35% of additional and nutritious ingredients such as fish paste, whey, and flours made from different grains including quinoa, buckwheat, chickpeas and many more. It is suitable for producing Pasta and noodles which are gluten-free, high-protein based, and includes functions to cater to people with special dietary requests and who may have allergies. ANKO also has a Food Lab that can assist you with developing innovative new products.

ANKO’s Noodle Extruder machine is co-created with Taiwan’s Food Industry Research and Development Institute. This innovative commercial noodle machine can be used to produce large quantities of noodles with unique shapes, such as heart-shaped, fish-shaped and dumbbell-shaped, as well as triangle-shaped noodles that increase the surface area to help absorb sauces after cooking. This machine is only 1.3 square meters (14 square foot) making it suitable for specialty noodle producers, central kitchens, chain restaurants, and food factories of any size. The automated noodle production starts after the dough is loaded in the hopper and then the machine’s automatic portioning function does the rest.
